BBQ Chicken Salad

I really don’t like salads. I know that may sound shocking to you. This statement coming from a nutrition coach. But I really don’t like them. Which means that this salad is legit. LEGIT.

When most people think about meal prep, they think of the images on social media of plain chicken breasts, rice and vegetables. Sorry, I just can’t eat that on the daily. I did. For a long time. Before I knew better. You can have delicious food and still take care of your health. One of the tips I give my clients is to have 1-2 proteins prepped in the fridge to easily make into something tasty. This is a great recipe to throw together with prepped chicken or pick up a rotisserie chicken on the way home. Easy Peasy!

The recipe below is for a single serving but is also super easy to adapt for all your friends and family!

BBQ Chicken Salad

Servings: 1 people


Dressing (makes many servings)

  • 1/4 cup Ranch Dressing
  • 1/4 cup BBQ Sauce


  • Romaine
  • 100 g Cooked Chicken
  • 60 g Frozen or Canned Corn
  • 30 g Chopped Cucumber
  • 30 g Avocado
  • 4 Grape Tomatoes
  • Chopped Green Onion


  • Jicama
  • Black Beans
  • Cheese


  • Make the dressing by adding the ranch and BBQ together. I like to put a small mason jar onto a scale and use the weight (so I don’t dirty any measuring cups). Then I just shake it up to mix it AND it’s already in a handy container to store.
  • In a bowl, add the amount of a leafy green that looks good to you. I used about 2 big handfuls.
  • Top with your fixins. Use the amount of dressing that makes sense for your dietary and tastebud needs. I used about 2T. 
  • Eat up!
