Dairy Free Protein Pancakes

Are you on team breakfast any time of the day? Good, me too! Since I have been trying to minimize the amount of dairy I have in my diet, I really miss having protein pancakes. Most mixes are made with whey and that is no bueno for my skin and digestion…

So I have been on a mission to make a decent protein pancake. And if you have ever tasted dairy free protein powder, you know how much of a task that is…

Two things you should know before you get started. The first is that depending on what brand of protein powder you use, it can directly influence the overall taste and texture of the pancakes so you may need to experiment with your brand. Secondly, you may prefer to have the batter a bit more runny, just add a bit more liquid.

Okay, let’s get into it.

Dairy Free Protein Pancakes

Servings 2 people

  • 51 g Vega Sport vanilla protein powder
  • 51 g Cup for Cup gluten free flour use any kind of flour you prefer
  • 1 tsp baking powder
  • 1 egg
  • 3 tbsp apple sauce
  • 1 tsp vanilla
  • ~3/4 cup almond milk

  • Heat large prepared pan or griddle over medium heat.
  • Add all dry ingredients to the bowl, mix to combine. You may want to add more almond milk to get the right consistency that you like.
  • Add all wet ingredients to dry mixture.
  • Wisk to combine being careful to not overmix.
  • Cook just like you would any other pancakes. I find them to be a bit on the thick side so I usually spread them out so they cook more through.
  • Makes about 8 small to medium pancakes.
